Beef sirloin accompanied by seasonal vegetables


200 gr clean beef sirloin per person
Cherry tomatoes
Wild mushrooms
Grilled bell peppers


Fry the beef in a very hot pan with a dash of extra virgin olive oil on both sides for about 3-4 minutes on each side depending on your preference. Finish off in the oven for another 2 minutes and let it rest for another 8 minutes.

For the side, we have seasonal vegetables, which can be from the list above or anything else that is in season. For the summer season, we might use bell peppers, pumpkins or squash. In winter, we can use, asparagus, beans, peas, kale. We use seasonal vegetables because that is when these vegetables are at their tastiest and most nutritious.

To prepare the vegetables, bake them in the oven at 180ºC taking care to serve them al dente. (Overcooking vegetables saps both nutrients and flavour.)
