Chickpea salad with bell peppers, onions, tomato, basil, coriander and boiled eggs

Ingredients:

1 can cooked chickpeas
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 onion
2 tomatoes
3 tsp chopped basil
2 tsp chopped coriander
1 lime
3 boiled eggs
Extra virgin olive oil
Modena vinegar

Preparation:

Drain and wash chickpeas and put in a bowl. Dice tomatoes, peppers and onion and put in a bowl. Meanwhile, boil your eggs for 10 minutes and put in cold water.

When cool, peel and slice the eggs and add them to your bowl.

Chop basil and coriander and with some squeezed lime in to add freshness, dress it up with a dash of extra virgin olive oil and Modena vinegar, a pinch of salt and pepper.
